Chipped Beef Gravy – made simple

Recipe by Bev Crockett

Chipped beef is a menu item for us that we have for breakfast or dinner.  And what made it even better was when I found a butcher shop with fresh ‘chipped beef’.  No more buying the bags at the grocery store.

Chipped Beef Gravy

Ingredients

Scale
  • 1/2 lb. fresh chipped beef – some delis’ have this or your local butcher shop
  • 1 T olive oil
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 6 – 8 biscuits – frozen Pillsbury buttermilk are my favorite

Instructions

  1. Pour the oil into a medium sized pot – medium heat
  2. Add the chipped beef, breaking up any lumps
  3. Toss around to ensure all is heated
  4. Sprinkle the flour over the warmed chipped beef
  5. Slowly, add the milk (all at one time though)
  6. Stir constantly to avoid scorching but the mixture will thicken.
  7. Serve with biscuits, toast or hash browns.

Notes

Note – depending on how you like your gravy, you may want to add more or less milk.  If by chance your mixture doesn’t thicken, you can add a cornstarch mixture to thicken.  (1 T cornstarch and add milk to get a paste)
