Crispy Brussel Spouts with Maple Bacon Glaze

Brussel Sprouts are one of our favorite veggies.  We grab them at the local farmers market and have been able to find a variety of yummy recipes.  This one is from Hearth Muse.

Grilled brussel sprouts

Ingredients

  • 1 1/2 lbs of brussel sprouts, trimmed and halved
  • 6 slices of thick cut bacon, chopped
  • 2 T olive oil
  • Salt & pepper to taste
  • 3 T pure maple syrup
  • 1 T Dijon mustard
  • 1 T apple cider vinegar
  • 1 T soy sauce
  • 1 tsp garlic powder
  • Optional – pinch of red pepper flakes for a spicy kick


Instructions

  • Preheat oven to 400°
  • Rinse and trim brussel sprouts, cutting in half
  • Cut slices of bacon into bite size pieces – I use meat scissors
  • Toss them in a bowl with olive oil, salt and pepper until evenly coated
  • In a large oven safe skillet or baking sheet (I use a cast iron skillet) arrange chopped bacon and Brussel sprouts together
  • Roast for 25 – 30 minutes, stirring halfway through.  The brussel sprouts should get golden and crispy along with the bacon
  • While the sprouts roast, whish maple syrup, Dijon mustard, vinegar, soy sauce and garlic powder in a small sauce pan.  Bring to a simmer over medium heat and cook 2 – 3 minutes, until slightly thickened.
  • Remove roasted sprouts and bacon from the oven.  Drizzle the warm maple glaze over them and toss gently to coat.
  • Return to the oven for 5 more minutes to carmelize the glaze.
