Crockpot Sweet & Sour Meatballs

This recipe is great as an appetizer or meal.  Also great to take to any gathering.  Meatballs are always a hit!

Ingredients

Scale
  • 3 lb. ground beef – I use 90% lean
  • 3 eggs
  • 3/4 cup breadcrumbs
  • 1/3  – 1/2 cup onion, finely diced
  • 3/4 tsp pepper
  • 3/4 tsp garlic powder
  • 18 oz. chili sauce
  • 18 oz. grape jelly
  • Parsley – optional

Instructions

  1. Preheat broiler – line two sheet pans with parchment paper sprayed with oil (I would use avocado or vegetable for higher heat tolerance)
  2. Mix the ground beef, eggs, breadcrumbs, onion, salt, pepper and garlic powder in a large bowl
  3. Mix thoroughly – I use food safe gloves for consistency.
  4. Shape into balls – I use the smallest of these scoops.
  5. Place on sheet pan and broil for 8 – 10 minutes or until golden brown.
  6. Prepare the sauce while meatballs are cooking.
  7. Melt grape jelly by microwaving for 30 second increments.
  8. Once melted, whisk in the chili sauce.
  9. Spray crockpot with oil.
  10. Add meatballs then pour the sauce over and fold in.
  11. Cook 3 hours on low.  Do not overcook.
  12. Serve with rice or your choice of starch. (or take toothpicks if taking to a gathering)

Notes

This recipe does take a little longer with a little more work given you are making the meatballs from scratch but trust me….it’s worth it over store bought, frozen meatballs.

You can also reduce the amount this makes by reducing the ingredients.
