Slow Cooker Chicken & Pasta

This recipe was served by my cousin during a camping trip and we totally enjoyed and loved it.  Served with salad and bread for the win.  It’s a great dish when you are serving a big family or group or to take to an outing.

Chicken Alfredo

Ingredients

  • 3 lbs. boneless, skinless chicken breasts
  • 24 oz. Olive Garden Italian Dressing
  • 3/4 cup grated parmesan cheese – split 1/2 for cooking and 1/4 for serving  (I always freshly grate)
  • 1/2 tsp. black pepper
  • 8 oz. cream cheese
  • 16 oz. Penne pasta

Instructions

  1. Lay chicken breasts in bottom of prepared slow cooker
  2. Pour Olive Garden Italian dressing over chicken
  3. Sprinkle 1/2 cup of grated parmesan cheese over the mixture
  4. Cut cream cheese in sections and lay on top of the chicken and dressing mixture
  5. Cook on high for 4  hours (can be cooked on low for longer period)
  6. When chicken is almost done, cook the Penne pasta to your desired texture.
  7. Shred the chicken inside the slow cooker (using 2 forks).  I have also used the Pampered Chef meat chopper.
  8. Drain past and add to chicken mixture, stir well.
  9. Serve with additional shredded parmesan cheese on top.
