Slow Cooker Honey Garlic Chicken & Veggies
This is a meal in a pot – everything you need for a perfect quick dinner. Put everything in, in the morning and it will be ready for your dinner.

Ingredients –
- 8 – 10 bone-in, skin-on thighs
- 12 oz. baby red potatoes, halved
- 12 oz. carrots – I use regular size and cut, you can use baby carrots
- 12 oz. green beans, trimmed
- 2 tsp. parsley leaves
Sauce –
- 1/2 cup soy sauce
- 1/2 cup honey
- 1/4 cup ketchup
- 2 garlic cloves, minced
- 1 tsp basil
- 1/4 tsp crushed red pepper flakes
- 1/4 tsp black pepper
Instructions
- In a medium sized bowl, combine all the ingredients for the sauce.
- Spray the crockpot (7.5 quart at leasts) then place the thighs, potatoes, and carrots in the crock pot
- Pour the sauce mixture over the thighs
- Cover and cook for 6 – 7 hours, basting occasionally.
- Add the green beans during the last hour or so.
