This recipe calls for a ‘shoulder’ roast which we find cooks up better and is more tender and moist vs. other cuts.

Be sure not to over or undercook the reoast. I typically check after 4 hours. Internal temperature should be 170 degrees.
I also uses the broth as gravy – pour into sauce pan and make a cornstarch and milk paste to thicken for gravy.
