Honey Garlic Shrimp

This recipe is great for your ‘seafood’ menu of the week.  I double the recipe and use the frozen shrimp from Costco – uncooked, peeled, deveined.

Honey Garlic Shrimp

Ingredients

  • 1 lb uncooked shrimp
  • 2/3 cup honey – I use local
  • 1/2 cup soy sauce
  • 4 garlic cloves, minced – or 2 T squeeze garlic (I get the big container from Costco or Sams)
  • 2 tsp fresh ginger – this really does make a difference.  We ❤️ fresh ginger.
  • 4 T Olive oil


Instructions

  1. Whisk the honey, soy sauce, garlic and ginger together in a medium bowl
  2. Place the shrimp in a large zip lock bag
  3. Pour 1/2 of the marinade/sauce on top of the shrimp and shake
  4. Allow the shrimp to marinade for at least 30 minutes.  (I have done longer and it’s fine)
  5. Place the remaining marinade in the refrigerator
  6. Heat Olive oil in large skillet over medium-high heat
  7. Place shrimp (disguard marinade in the bag)  in the skillet – cook for about 1 – 2 minutes per side then flip
  8. Pour remaining marinade over the shrimp and cook until shrimp are cooked thoroughly – usually another minute or two
  9. Serve over rice along with a veggie  – fresh or frozen broccoli pairs well.
