Stove Top Stuffing Meatloaf

  • I cannot take credit for this at all but….It’s super easy and so yummy.  My whole family prefers this over any other meatloaf recipe.
Stove Top Stuffing Meatloaf

Ingredients

For the meatloaf:

  • 1 6 oz. box of Stove top Stuffing Mix – any flavor (I use Traditional Sage or Herb)
  • 1 cup of hot water
  • 2 lbs. ground beef
  • 2 large eggs

For the glaze –

  • 1 cup ketchup
  • 1/4 cup brown sugar
  • 2 tsp Worcestershire sauce
  • 1 tsp yellow mustard
  • 2 tsp onion powder


Instructions

  1. In a large bowl, pour the stuffing mix into and add the hot water.
  2. Mix and let sit while you mix the ingredients for the glaze. (about 5 minutes)
  3. In a separate bowl, combine all ingredients for the glaze.
  4. Add ground beef and the eggs to the stuffing, mixing thoroughly.
  5. Add 1/2 cup of the glaze mixture and mix well.  I use food safe gloves which work great for consistent mixing.
  6. Heat oven to 350°
  7. Pack mixture into prepared baking dish – I spray with Olive, Canola or Vegetable oil.
  8. Top meatloaf with 1/2 cup of the glaze mixture
  9. Bake for 45 minutes.
  10. Remove and top with remaining glaze, baking for an additional 5 – 10 minutes.  (Mixture should reach 160°)

Notes

Options are to use Ground Chuck however I have found beef adds more flavor as it contains more ‘fat’.

I serve this with a vegetable – side salad, green beans, broccoli, etc. and mashed potatoes.  Don’t hesitate or feel guilty using the Idahoan brand mashed potatoes.  So many options and works great on a week night.
