1 6 oz. box of Stove top Stuffing Mix – any flavor (I use Traditional Sage or Herb)
1 cup of hot water
2 lbs. ground beef
2 large eggs
For the glaze –
1 cup ketchup
1/4 cup brown sugar
2 tsp Worcestershire sauce
1 tsp yellow mustard
2 tsp onion powder
Instructions
In a large bowl, pour the stuffing mix into and add the hot water.
Mix and let sit while you mix the ingredients for the glaze. (about 5 minutes)
In a separate bowl, combine all ingredients for the glaze.
Add ground beef and the eggs to the stuffing, mixing thoroughly.
Add 1/2 cup of the glaze mixture and mix well. I use food safe gloves which work great for consistent mixing.
Heat oven to 350°
Pack mixture into prepared baking dish – I spray with Olive, Canola or Vegetable oil.
Top meatloaf with 1/2 cup of the glaze mixture
Bake for 45 minutes.
Remove and top with remaining glaze, baking for an additional 5 – 10 minutes. (Mixture should reach 160°)
Notes
Options are to use Ground Chuck however I have found beef adds more flavor as it contains more ‘fat’.
I serve this with a vegetable – side salad, green beans, broccoli, etc. and mashed potatoes. Don’t hesitate or feel guilty using the Idahoan brand mashed potatoes. So many options and works great on a week night.
