Molasses cookies remind of my mom making gingerbread at Christmas timed, actually it didn’t even have to be Christmas time if we asked 💕. There’s just something about the dark color and smooth taste that I used to love. And while I haven’t found her recipe or attempted ginger’bread’, I did stumble upon this recipe @ Gimme Some Oven and I have to say it was perfect! Even my sister asked for the recipe. I hope you enjoy as much as we do!
In a medium bowl, whisk together the flour, soda, cinnamon, cloves, ginger and salt. Set aside.
Using a separate mixing bowl, either with a hand mixer or stand mixer, cream together the softened butter and sugars on medium – high speed until the mixture is light and fluffy and a pale yellow color – this was about 2 minutes, constantly scraping the sides.
Mix in the eggs, one at a time, and molasses until each is combined.
Gradually add in the dry ingredient mixture and mix until it is evenly incorporated
Transfer the dough to an airtight container and refrigerate for at least 2 hours.
Preheat oven to 350° and line a sheet pan with parchment paper.
Roll the dough into small balls – about 1″. I use a 1″ scoop.
Fill a separate small bowl with white sugar and roll each ball in the sugar until it’s completely coated.
Place the dough balls on the prepared baking sheet.
Bake for about 8 – 10 minutes until the cookies begin to slightly crack on top. Do not overbake as you want them to be chewy.
Remove from the oven and let cook for a few minutes then transfer to a cooling rack.
