Crack Chicken Noodle Soup

This recipe is sooo awesome!  It’s rich and creamy and definitely a family favorite.  The name is perfect 😉

Chicken Noodle Soup

Ingredients

Scale
  • 1 cup bacon, diced
  • 2 T unsalted butter
  • 1 yellow onion, diced
  • 2 ribs celery, diced
  • 2 large carrots, diced
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 pkg dry ranch dressing
  • 1 tsp black pepper
  • 2 tsp parsley
  • 4 cups cooked, shredded chicken – I use rotisserie chicken from Costco
  • 1 cup half and half
  • 8 oz cream cheese, cubed
  • 2 cups shredded cheddar cheese
  • 12 oz. Reames Egg noodles (optional)
  • green onion


Instructions

  1. Heat a large pot over medium-high heat and cook the diced cup bacon.  Remove the bacon from the pot and set aside.
  2. Add 2 T unsalted butter, diced onion, celery and carrots.
  3. Saute the vegetables until they are softened – about 5 minutes.
  4. Add the garlic and saute for an additional minute or so
  5. Add chicken broth, dry ranch dressing, black pepper, chicken, sour cream, cream cheese and bacon.  Cook, stirring continually until cream cheese melts into the soup evenly.  Also add the noodles if you choose to use Reames Egg noodles.
  6. Add shredded cheddar cheese, cooking until cheese is melted.
  7. Reduce to low heat and let simmer until ready to serve.
  8. Serve with additional cheddar cheese and green onions

Notes

Just fyi but this is not really a ‘quick and easy’ weeknight meal.  This recipe takes some time and may be better served on a weekend.  A chilly Sunday evening ❤️🍜
