Chocolate Chip Cookie Bars

These bars remind me of my childhood days when my Mom used to make “Blonde” brownies.  So soft and chewy – never enough chocolate.  The original recipe was found on Simply Family Recipes however I was unable to find after my original search.

Chocolate Chip Cookie Bars

Ingredients

  • 1 cup unsalted butter, melted – let cool
  • 1 cup light brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs – room temperature is better
  • 2 tsp vanilla extract (I always use ‘pure vanilla’)
  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups semi-sweet chocolate morsels – mini work also (it’s a regular sized bag)


Instructions

  1. Preheat over to 350°
  2. Line a 9 x 13 pan with parchment paper.  This makes it easy to lift out and cut.
  3. In a large bowl, whisk the melted butter, brown sugar and granulated sugar until smooth.
  4. Beat in the eggs, one at a time, then stir in the vanilla. (I used a hand mixer)
  5. Gently fold in the flour, baking soda and salt until combined.  Don’t overmix.
  6. Stir in the chocolate chips, reserving some to sprinkle on top before baking.
  7. Spread dough evenlyin the pan and bake for 25-30 minutes or until the edges are golden but center is slightly soft.
  8. Let cool.  Remove from pan.  Cut and enjoy!
