Avocado makes everything better!

Grilled Salmon with avocado

Ingredients

For the Salmon –

  • 7 – 8 Salmon portions (I get these from Costco – there are typically 7 in a bag)
  • 2 T Olive oil
  • 2 tsp salt
  • 3 tsp cumin
  • 3 tsp paprika
  • 3 tsp onion powder
  • 1 1/2 tsp chili powder
  • 2 tsp black pepper

for the Avocado –

  • 3 Avocados, cubed
  • Red onion – small, diced
  • 3 limes, juiced
  • 3 T fresh Cilantro


Instructions

  1. Mix the chili powder, cumin, paprika and onion powder together.
  2. Rub the salmon portions with olive oil, sprinkle with salt and pepper
  3. Coat the salmon with the seasoning mix.
  4. Refrigerate for at least 30 minutes.
  5. Combine the avocado, onion, cilantro and lime juice in a a bowl and mix well.
  6. Refrigerate until ready to use.
  7. Grill the salmon until cooked thoroughly. (You can also do this on the stove)
  8. Remove from pan, top with avocado mixture and serve.

Notes

Original recipe from The Cookie Rookie.  I modified for more servings and we love avocado so increased the topping.
