Chocolate Chip Cookie Bars
These bars remind me of my childhood days when my Mom used to make “Blonde” brownies. So soft and chewy – never enough chocolate. The original recipe was found on Simply Family Recipes however I was unable to find after my original search.

Ingredients

- 1 cup unsalted butter, melted – let cool
- 1 cup light brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs – room temperature is better
- 2 tsp vanilla extract (I always use ‘pure vanilla’)
- 2 1/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 2 cups semi-sweet chocolate morsels – mini work also (it’s a regular sized bag)
Instructions
- Preheat over to 350°
- Line a 9 x 13 pan with parchment paper. This makes it easy to lift out and cut.
- In a large bowl, whisk the melted butter, brown sugar and granulated sugar until smooth.
- Beat in the eggs, one at a time, then stir in the vanilla. (I used a hand mixer)
- Gently fold in the flour, baking soda and salt until combined. Don’t overmix.
- Stir in the chocolate chips, reserving some to sprinkle on top before baking.
- Spread dough evenlyin the pan and bake for 25-30 minutes or until the edges are golden but center is slightly soft.
- Let cool. Remove from pan. Cut and enjoy!
