Our son asked for Pork Chops topped with Bacon Jam so we searched a few local places to purchase some jam, to no avail. So, I found a recipe on-line to use as my foundation. Melissa’s Southern Kitchen posted the original. I made a few changes but nothing major.
1 tsp chili powder or paprika – (I use chili powder for a little bite)
sprinkle of red pepper flakes
Instructions
Cook the bacon in a large skillet until crispy. Remove from skillet to let cool for crumbling. Remove grease from pan but do not scrape. (I always retain the grease for other recipes/cooking).
Add the butter and onion to the skillet, cooking until carmelized. About 10- 15 minutes.
Add the garlic and cook for another minute or so.
Add brown sugar, maple syrup, vinegar, chili powder, pepper flakes and bacon to the skillet.
Reduce heat and simmer uncovered until thickened and the liquid has reduced, around 20-25-minutes.
Serve warm or you can refrigerate up to about a week.
