Salmon with Avocado Salsa
Avocado makes everything better!

Ingredients

For the Salmon –
- 7 – 8 Salmon portions (I get these from Costco – there are typically 7 in a bag)
- 2 T Olive oil
- 2 tsp salt
- 3 tsp cumin
- 3 tsp paprika
- 3 tsp onion powder
- 1 1/2 tsp chili powder
- 2 tsp black pepper
for the Avocado –
- 3 Avocados, cubed
- Red onion – small, diced
- 3 limes, juiced
- 3 T fresh Cilantro
Instructions
- Mix the chili powder, cumin, paprika and onion powder together.
- Rub the salmon portions with olive oil, sprinkle with salt and pepper
- Coat the salmon with the seasoning mix.
- Refrigerate for at least 30 minutes.
- Combine the avocado, onion, cilantro and lime juice in a a bowl and mix well.
- Refrigerate until ready to use.
- Grill the salmon until cooked thoroughly. (You can also do this on the stove)
- Remove from pan, top with avocado mixture and serve.

Original recipe from The Cookie Rookie. I modified for more servings and we love avocado so increased the topping.
