Brussel Sprouts are one of our favorite veggies. We grab them at the local farmers market and have been able to find a variety of yummy recipes. This one is from Hearth Muse.
Optional – pinch of red pepper flakes for a spicy kick
Instructions
Preheat oven to 400°
Rinse and trim brussel sprouts, cutting in half
Cut slices of bacon into bite size pieces – I use meat scissors
Toss them in a bowl with olive oil, salt and pepper until evenly coated
In a large oven safe skillet or baking sheet (I use a cast iron skillet) arrange chopped bacon and Brussel sprouts together
Roast for 25 – 30 minutes, stirring halfway through. The brussel sprouts should get golden and crispy along with the bacon
While the sprouts roast, whish maple syrup, Dijon mustard, vinegar, soy sauce and garlic powder in a small sauce pan. Bring to a simmer over medium heat and cook 2 – 3 minutes, until slightly thickened.
Remove roasted sprouts and bacon from the oven. Drizzle the warm maple glaze over them and toss gently to coat.
Return to the oven for 5 more minutes to carmelize the glaze.
